This baked salmon recipe is quick and easy and is packed with some great nutrients!

Ingredients:

  • 8oz salmon fillet – divided into two 4 oz portions
  • 2 lemons
  • A handful of cherry tomatoes OR 1 small tomato, diced
  • 2-3 small yellow potatoes, cubed
  • 8 oz of fresh spinach OR frozen cut leaf spinach
  • 1 tbsp of garlic powder
  • 1 tsp of paprika
  • 1 tsp of ground ginger
  • 1 tsp of dried parsley OR fresh parsley
  • 1 tsp of ground black pepper
  • Pine of salt
  • 2 tbsp of olive oil – divided into two 1 tbsp portions

Instructions:

  1. Preheat your oven to 425 F.
  2. In a large mixing bowl, add your cubed potatoes, 1 tbsp of olive oil, a pinch of salt, a few cracks of fresh ground black pepper. Toss this together.
  3. Spread the potatoes out on a sheet pan in an even layer. Move the potatoes over to one side of the sheet pan, reserving the other half for the salmon pouch.
  4. Place the potatoes in the oven and set a timer for 10 minutes.
  5. While the potatoes are cooking, prepare your salmon pouch by starting with the seasoning mix.
  6. Add the garlic powder, paprika, ginger, ground pepper, parsley, and salt into a bowl. Squeeze in the juice from half a lemon, the remaining olive oil, and mix. Set this aside.
  7. Take a large piece of aluminum foil and create a bed with the spinach.
  8. Lay the salmon filets on top of the spinach.
  9. Add the cherry tomatoes or diced tomatoes.
  10. Lay the lemon slices on top. Spread the spice mixture over the salmon pieces.
  11. Fold up the foil to create a pouch. Make sure to seal the pouch well to prevent steam from escaping.
  12. Once the timer has gone off, take the potatoes out and give them a flip.
  13. Place the salmon pouch on the other side of the sheet pan. Place the pan in the oven and set a timer for 15 minutes.
  14. Once the timer has gone off, take the pan out of the oven and let it sit for 3-5 minutes.
  15. Plate and enjoy!
